Delightful Dungeness Crab by Maria Strubel "In Oregon, Dungeness crab season opens December 1 and runs through August. December, January and February is when most of the commercial harvest occurs and typically when the supply is most abundant. Harvest effort decreases in the spring as many fishermen gear up for other coastal fisheries, but fresh crab continues to be caught commercially throughout the summer months. When fresh Oregon crab is not plentiful, fresh Dungeness is usually still available from the Northwest's inland waters that remain open to crabbing, typically making crab available year around.

Dungeness crab is enjoyed many different ways. It's cooked in the shell by boiling, then is often eaten as simply fresh cracked crab served with cocktail sauce or drawn butter. It is also commonly used as a topping for salads, a filling for omelets or a stuffing for seafood or chicken. Crab cakes are served up and down the coast and no two recipes are alike, mixing in varying combinations of spices, herbs and ingredients. They are often paired with flavorful sauces. However you choose to enjoy Dungeness crab, it is best served fresh and with minimal adornment to avoid overpowering its delicate flavor. Dungeness crab cuisine on the coast runs the gamut from the simplest cracked crab dinner to elaborate and unique fine dining preparations. Classic crab louies and crab cocktails of pearly white Dungeness are also menu staples at many coastal restaurants."
